This chapter examines the synergies between health and nutrition and their impact on living standards in Mexico by way of the analysis of the quantitative evidence available. It discusses the evolution of public health and the history of disease and suggests that until the turn of the century public health services could only be found in the more affluent sections of the main cities of Mexico. It also mentions that the diet of the majority of the population barely changed in caloric and nutritional value during the 1850–1950 period and that the traditional diet of the average Mexican was low in protein.
